My big baby girl

Ginger is sure getting around....by rolling. I haven't seen her actually crawl yet. It's funny where some of the places I find her at.
Later after I took this picture, she whined 'cause she was stuck under the swing. Silly Girl! She's so fun.
Gingi's all tuckered out from a tough morning of rolling around and playing. I can't believe how big she looks in her crib now. My little baby isn't so little anymore... :(

Tortillas From Scratch

We were going to have burritos for dinner but when I pulled the tortillas out, they were moldy! I had them for only a week. Usually tortillas last alot long then just a week. I didn't want to make a trip to the store just for tortillas, so I decided to search the net for a recipe. I came across this site, http://homesicktexan.blogspot.com I found a simple recipe that made my tortillas turn out good. All I needed for the recipe was 2 cups of flour, 2 tsp. of oil, 3/4 cups of warm milk, 1 tsp. of salt, and 1 1/2 tsp. of baking powder.






Once the dough was made, I had to make 8 balls and cover and let set for 10 minutes.














Then, one at a time I rolled each ball out to about an 8"diameter circle.














Then I just had to cook each side for about 30 seconds.

These made great burittos. We like these tortillas better than the store bought kind. They're softer and lighter.

Home Made BlackBerry Pie

For FHE, Glen and I went backberry pickin'. I told Glen that if he got enough berries, then I would back him a pie. I'm normally not in to bakin pies. I prefer crisps and cobblers (they're sweeter to me) I never cared for pies a whole lot, but since doing this pie, I think I've changed my mind.

I went to Cooks.com and picked out several pie crust recipes. The recipe I chose turned out really good. It was fast and easy. I didn't even have to refridgerate it for four hours like other recipes said to do. I actually ate my pie crust. Usually I eat the inside and leave the crust. Here is the recipe I used to make my pie. Maybe you would like to try it some time.

Berry Mixture: Take five cups of berries and add 1/4 cup of arrowroot powder and 1/3 cup of sugar (I doubled my sugar). Stir and set aside.

Crust: Mix 1 cup of butter, 2 cups of flour and a tsp. of salt and set aside. Stir 1/4 cup of milk and 2 tbsp. of vinegar and let set just a few minutes. Combine the milk mixture and flour and mix till it forms a ball. Roll out on floured surface and divide in two. Place bottom crust in pan and fill with berry mixture. Then place top crust on and seal edges. Bake in oven for 45 minutes till golden brown at 375 degrees.

I'm pretty happy with the way it turned out. The top crust ripped a little when I was putting it on. I think I rolled out the crust too thin on that part.

Walmart's End of Summer 2007 Photo Contest


I saw that Walmart was having a photo contest a few weeks ago. I thought that could be something fun to enter. I entered three photos. Two of Ginger and the one with my dad acting like a killer whale going after Baby Seal Zach. Out of the three, I thought the killer whale one would have won, but it didn't. Anyway, my 3rd place prize was a $5.00 walmart gift card, a voucher to have 50 photos developed for free and a free 8x10 of the winning photo. I think I'm going to start keeping an eye open for any more fun contests!

THE BEAST!

Eversince we moved to these apartments, we've noticed this weird half cat, half linx looking thing lurking around the neighborhood. We would only see it at night, so they made it seem even more creepy. Well, we finally got a glimpse of it yesturday so Glen ran out with the camera to see what he could get. We're excited to finally have a photo of this thing....the beast!
With no tail and pointy ears and large paws..we wonder if its got part Linx in it.
We think it come down from the mountain right across from our apartment complex. We see it cross the road and go to our dumpster and then cross the road again and disapear behind the trees.

We love our Bikes!

I love my bike trailer. It provided me a great escape with Ginger from when we lived in the RV earlier this year.
Ginger does real well in the trailer. I sewed some straps for the bike trailer to hold Ginger's car seat in since she wasn't big enough to wear a helmet.
We went on a 17 mile ride out in the country. I was a little nervous to ride my bike pass the cows on the road. I love it here in Oregon. I love how it takes just a minute to get out to the country.

Glen has been keeping busy helping his brothers build their parents house on the original Chandler homestead.
It's fun to follow their progress.


Spiru-tein

Wanna lose that baby weight? Spiru-tein is the answer! Spiru-tein is the best. It's this really good shake with very little sugar content. It's helped me lose that baby weight. My mom told me about and I just love it. I love blending a half of a frozen banana in it. It makes it thick and creamy. It might seem expensive at first, but I figured out that it's really only a $1.50 per meal. (if that's all you eat). So really, it's not that expensive. One container lasts a long time...about two months. I have a shake every day for breakfast. It's quick and easy and no mess. ( I'm starting to feel like a commercial)

Our Annual Raft Trip

Glen and I thought it would be fun to have theme this year for our raft trip. We decided on a Pirate theme and I drew up a logo to stick on all the water bottles we got for everyone.
This is Glen and Max standing next to our Pirate Flag. There was a guy in La Grande with a temporary flag stand. We saw the Pirate flag and thought it would be perfect for our camp.
Glen and I were preparing breakfast for mates! Argh!

The Treasure Hunt

My sister, Wendy helped me bury the treasure after the kids went to bed.
While everyone else went rafting, the kids searched for there treasure.

It wasn't till late that night and with help from everyone else that they found their treasure. (I couldn't even find some of the pieces I buried.. the beach looked different at night compared to during the day.

Mouth Watering Fruit Pizza

This is our favorite summer time dessert!
The crust is sugar cookie dough. The creme is fat free cream cheese, powder sugar, and cool whip. The rest is fruit.

Our House Plans

I've been busy lately drawing up our house plans while Glen's been at work. It's been a good learning experience for me. I didn't realize we had to submit so many drawings and views to the city to build our house. I thought the county would only need a plan view and some elevation views. We have to submit a total of 10 drawings! So far I have half of them done. Between that and caring for Ginger, I haven't gotten much of anything else done...except for taking a break to finally get caught up with my blogging. I haven't blogged for nearly 6 months.
Finally after the fourth drawing of house plans, we settled on this one. I've always enjoyed drawing, but I think I'm getting a little burnt out on it now...maybe that's why I decided to do some blogging for a change.
Here is the front elevation view of our house. This is what it should look like when we're all done. We're excited.

Demolition Derby

Glen took me and Ginger on a surpise date to the demo derby. I had been wanting to go for a long time. We went to Baker City to see it. We had a good time. Ginger did good too. I just covered her ears when it got real loud.
We made bets on which cars we thought would survive the longest.
