Home Made Twinkies!

A lady in my spin class gave me this recipe in exchange for my bismark recipe. I made these for Easter dessert and they were so good! Glen wouldn't allow me to give any away. hahahah (sorry Gail)
So here's the recipe.

  • one yellow cake mix.
  • 4 eggs
  • 1/2 c. oil
  • 1/2 tsp. vanilla
  • water (as directed on cake mix box.

Mix these ingrediants and then make cupcakes.

For the filling, combine:

  • 1 2/3 cup. powdered sugar
  • 3/4 cup. butter
  • 1 small jar of marshmellow creme.

whip it together and pipe into cupcakes.

Quick and easy. Glen thinks they're better than the real Twinky!

La Grande to Boston!

So I've been spending my time making a poster for my spin class at the gym.
I wanted a way for them to be able to track how far they ride and have a little incentive to continue class when the weather gets nicer outside. I made each member a character with their face on it which they can velcro to the poster.

The goal is to track our mileage each month and whoever gets to Boston first wins a free one month membership. We ride about 17 miles each class time. La Grande to Boston is 2,865 miles. I chose Boston because of the famous "Seattle to Boston bike ride". Boston is pretty much straight across the U.S.. I think it'll add up fast especially if they attend three times a week!

Easter!

Here is Ginger wearing her new easter/spring dress from Gramma Faye. So cute!

We had a good Easter. It was full of care packages from my mom and sisters and good food, eggs and basket hunts and a Pass Over Ceremony put on by Kristi and Troy. The ceremony was like nothing I've done before. Pretty different! It was nice to of Kristi and Troy to set the whole thing up for us so we could experience it. The only thing we didn't get to was dying eggs. I had all the stuff to do it, but we just ran outa time. oh well, next year!

Irish Dinner

So we had our Monthly Themed Dinner, but I forgot to take pics of it. We had Corn beef and Cabbage. Shari made a potatoe, bacon, sausage, onion dish ( I forgot what it was called) Kristi made some interesting desserts that the Irish used to eat long long ago. One of them was oatmeal with a bunch of cream. It reminded my of my grandmas hot cereal with mocha mix. Kristi also made a really good bread.
After dinner we played games. We played one our (mine and Glen's) favorite. We raced to see who could get into the paper ball first to retrieve the prize in the center. You just have to wear oven mitts and use butter knives. Dale was so cute to watch.
After that we played Pyschologist, Going to the Party and some others. It was alot of fun. Glen and I love playing games.

Gingi has a bathing suit!

Ginger Stands!

Ginger has been practicing balancing next to the couch and other furniture. Yesturday was the first day she just up and stood. I was glad to get her on video right at the beginning. I'm amazed at how quickly she has already improved with standing in just one day. Once she is ready, she doesn't take long to figure things out.

Bread Recipe for Holly Doll!

  • 5 cups wheat flour
  • 2/3 c. gluten
  • 2 tbsp. yeast
  • 4 cups water (120-130 degrees)
  • 2/3 cups oil
  • 2/3 cups sugar or honey
  • 2 tbsp. lemon juice
  • 2 tbsp. salt
  • 3 cups. wheat flour

Mix first three ingrediants. Add hot water and mix. Cover and let rest 10 min. Add salt, oil, sugar, lemon juice and beat one minute. Add remaining 3 cups flour. Beat till dough pulls from sides of bowl. Preheat oven for one minute and then turn off. Turn dough on oiled surface; divide in two and shape into loaves. Place in oiled bread pans.* Let rise 15 min. Bake at 350 degrees for about 30 minutes.

* This is when I prefer to use Wilton Cake Release instead of oil. I found that the bottom of my loaves were burning so I switched to the Cake release and now they are a nice golden brown instead of black! (It could be something with my oven too, it's old and heat isn't distributed very well.)

I use two large loaf pans for this bread. Makes good sandwhich size slices. :)

Favorite thing for March


I love using Wilton's Cake Release for when I bake cakes, breads or anything that requires you to grease a pan. I didn't know about it until I took cake decorating classes at Michaels a few years ago. I just use a basting brush to paint my pan with this stuff. Works great!
